Lasagna Rolls

Here is the recipe for Sunday night's dinner I made. I found it a while ago in the newspaper coupons! I have made some alterations for what I like. Here you go!

*2 cups ricotta or cottage cheese
*1 1/2 cups mozzarella cheese (set aside the 1/2 cup for later)
*1/2 cup grated parmesan cheese (set aside 1/4 cup for later)
*1 beaten egg
*3/4 tsp. garlic powder
*1/2 tsp. onion powder
*1/2 tsp. salt
*1/4 tsp. black pepper
*2 Tbsp. parsley flakes
*1 lb. ground beef
*1 jar favorite spaghetti sauce (I really like the flavor of 'Prego-flavored with meat')
*8 cooked lasagna noodle (you might want to cook a couple extra in case some of them tear)

Preheat oven to 375. Cook lasagna noodles according to directions on package. Drain and lay flat on paper towel to cool and dry. Combine 1st nine ingredients in a bowl and set aside. Brown beef with a little bit of onion and garlic powder. Drain fat. Stir in about 1 1/2 cups of spaghetti sauce. Prepare a 9x13 pan by spraying with non-stick spray and add about 1/4 c. spaghetti sauce mixed with 1/4 c. water to the bottom. Lay cooled noodles on a piece of plastic wrap. Spread a thin layer of cheese mixture on entire noodle. Top with a thin layer of meat mixture. Roll gently and place seem-side down in pan. If you made extra noodles and they all cooked well and didn't tear, there should be enough mixture to fill them. If not and you have extra filling, just spread it on top of the rolls. Top the rolls with enough spaghetti sauce to cover them. Sprinkle the tops with the remainder of the mozarella and parmesan cheese. Bake uncovered for 30 minutes. Serves 8.

Notes: Serve with a salad or other vegetable and some garlic or cheese bread. Shredded chicken can be used instead of the beef (with or without the spaghetti sauce mixed in).
